I had to do it! I dove into TwoMorrows’ Kirby Checklist Gold Edition and pulled all the interviews listed there into a separate chronological list. Since the Checklist was published in 2008, it only contained info up to issue 49 of The Jack Kirby Collector. So, into the Museum’s TJKC archives I went to make sure everything was as up-to-date as possible. From there, I went to YouTube, Facebook, my email archive, and regular ol’ Google searches to find as many entries as I could. I included a few non-interview-but-Kirby’s-words entries, too, well, just because.
This post is a work-in progress. I’ll add to it as more information comes in. Any scans, snapshots, suggestions, pointers welcome via the comments below. OF COURSE there are more Jack Kirby recordings and/or transcripts out there. Please don’t keep them a secret!

Not sure how you would go about it, but it would be great to get the complete transcripts of interviews done for inclusion in articles where only snips of the interview are quoted.
The Howard Zimmerman interview would be a real treasure based on what was published from it.
You are missing one I’m aware of . There is an article by Peter Dodds Jr. called “The Gods Themselves” in AMAZING HEROES #47, May 15, 1984. The article contains a good number of quotes from an interview Dodds did with Kirby.
Yes! I remember the Dodds piece having been cited. Thanks, Patrick. I asked some of Zimmerman’s colleagues about more information from the Zimmerman piece back in 2008 or so – they said it was unlikely there was anything available.
The transcript of the Dodds interview would be well worth tracking down. It gives the impression that Kirby delved in depth on the FOURTH WORLD . It also contains fairly lengthy comments on the role of women in Kirby’s work.

I wonder if anyone has ever attempted to get a hold of Saul Braun to find out if he’d make any more of his interviews public. Not only the interview with Kirby, but the Braun article is one of the very few to contain a real quote from Martin Goodman.
